Six suites, six private pools and one enormous Caldera view – Atoles Retreat keeps things beautifully simple. Hidden in Imerovigli, its cave-like suites mix Santorini stone and marble with clean contemporary interiors, but we’d probably spend most of our time outside. Every accommodation has its own terrace and private heated plunge pool, while the Infinity Suite and larger villa add particularly spectacular pools right at the cliff edge. There’s no sprawling resort infrastructure here, and that’s exactly the point. Breakfast, pool, sunset, repeat – sometimes a holiday really doesn’t need to be more complicated than that.
