One of One has taken Santorini’s cave-hotel idea and given it a much moodier, more contemporary twist. With a selection of just 15 exclusive suites in Imerovigli, with volcanic stone, earthy colours and dramatic views shaping the whole experience. The fun part is choosing your side of the island: Sunrise Suites look towards the morning light, while Sunset and Cave Suites face the caldera – all available with heated private pools. There’s also a spa, gym and in-room dining built around Greek flavours and Santorini wines. We’d go straight for a Sunset Suite, open a bottle of Assyrtiko and consider sightseeing very much optional.
